Gen Z Leads Dairy’s Foodservice Shift

Younger consumers are sourcing dairy away from home at far higher rates than older generations, according to Datassential’s Cheese & Dairy report.
Dairy skews heavily toward at-home consumption, between 75% and 86% of last occasions happening at home depending on the category, among consumers who had that item in the past two weeks.

That uniformity makes the generational divide notable: among Gen Z and Millennials, at least one-quarter of last cheese, yogurt, and sour cream/cream/buttermilk occasions came from foodservice, while Gen X and Boomers topped out at 16% in any category.
The gap is widest for sour cream, cream, and buttermilk, where 42% of Gen Z consumers had their last occasion away from home, compared with just 9% of Boomers.
Cheese shows a similar pattern. Sandwiches, pizza, and burgers accounted for half of last cheese occasions, and Gen Z was nearly three times as likely as Boomers to have sourced cheese away from home, at 31% versus 12%.
“This foodservice skew shows growth opportunity for operators building dairy-forward menu items targeted at younger consumers, who are already sourcing these categories away from home,” the report notes.
Yogurt and milk remain the most home-bound categories. Nearly half of last yogurt occasions were eaten by itself with a spoon, and cereal remains the top format for milk, with each category posting the smallest away-from-home shares, at 17% and 14%, respectively.
The pattern tracks broader dining behavior. Roughly 36% of Gen Z and 31% of Millennials source meals away from home, compared with 26% of Gen X and 18% of Boomers, according to Datassential’s Pantry Priorities & Plate Disruptors report.
